Would you like to have a gourmet meal without the gourmet price or effort? If so, this stuffed chicken breast recipe is perfect for you. The great thing about this recipe is there are two ways prepare it. On the night I prepared this we had an uncharacteristic off night so I decided to bake it in the oven. However, for those busy nights this can also be prepared in a crockpot.
Ingredients
- 4 Chicken Breasts
- 1 box of chicken stuffing
- 1 ½ C Water
- 1 bag of frozen broccoli florets (not pieces)
- 2 cans of Cream of Chicken Soup
Makes four servings.
Instructions
- Steam broccoli
- Place 1 chicken breast in a freezer bag
- Pound chicken breast so they are approximately ½ inch thick using a meat tenderizer.
- Repeat for remaining chicken breasts
- Mix cooked broccoli with stuffing, water and spice mixture
- Let stuffing mixture stand until stuffing is moist
- Place two heaping tablespoons of stuffing mixture at end of chicken breast
- Roll up chicken
- Place seam down in pan lined with aluminum foil
- Top with any leftover stuffing and broccoli
- Top with 2 cans of cream of chicken soup
- Cover with aluminum foil
- Cook in 425° oven for 40 minutes.
Accompaniment
Adding another vegetable such as peas, carrots, or brussel sprouts is a great accompaniment. When buying frozen veggies it’s great to look for sales and stock up on your favorites.
Variation
This recipe can also be cooked in a crockpot.
- Follow directions 1 – 8 from above the night before and place in refrigerator.
- In the morning, place crockpot liner in the crockpot
- Put 2 tbls. of cream of chicken soup in bottom of crockpot
- Place chicken, seam down, in the crockpot
- Top with leftover stuffing and broccoli
- Top with 2 cans of cream of chicken soup
- Cook on low for 4-6 hours.
Cost Analysis
For this recipe I shopped at Aldi. The cream of chicken soup was on sale for $0.10 off per can.
